Easter nests recipe


Cooking is creativity!

There's something about coconut that reminds me of my childhood Easters. My family would always make a coconut cake (wether a traditionally round-layered cake or one shaped like a bunny). I didn't have the energy for a full-on cake (and didn't want the pressure to eat the whole thing just me and my husband), so I made some Easter nests ... that might very well be a new tradition in our home!

Easter Nests
1 pkg flaked coconut
1 can sweetened condensed milk
1 tsp almond extract
raspberry jam

Combine the first 3 ingredients.
Form into small balls & stick your thumb into the ball, making a "nest."
Bake at 375'F or 190'C for 10 min (of until light brown on edges).
Spoon jam into the nest well.
